Serg's Chicken Parmesean
Ingredients
One large can of Fire Roasted Tomatoes
One Sweet onion
2 Cloves Garlic or more if you like
Salt to taste
Crushed Red Pepper to taste
2 Pounds Thin Sliced Chicken Breast
A package of fresh Bazil
1 Block of Smoked Mozzerella It will be a round ball.
Shredded Parmesean USe as much as you want
Directions
Preheat your oven to 400
Grill the chicken until is almost done. It should be a little pink still in the middle. Set that aside
Chop up the onion and press the garlic. Put both in to a sauce pan and some olive oil and heat at medium until the mixture is clear. Chop up the bazil. Add the spices, bazil, and the can of Fire Roasted Tomatoes. Cover and let simmer for 20 minutes.
Slice up the Mozzerella.
Take a large pyrex baking pan pour half of the sauce in to the bottom of the pan. Lay the breast flat and cover them with the Mozerella. Pour the rest of the sauce on top and smother that with Parmesean.
Bake until the Parm is light brown.
