Bunny's Kickass Guacamole!

1 avocado, slightly overripe
1 tomato
1 tsp lemon juice
1 lg clove fresh garlic
1 tsp salt
1/4 tsp black pepper
1 tsp olive oil
1 small onion
dash of coriander
dash of cilantro

Peel the tomato* and remove seeds, toss in food processor with peeled avocado, and everything else except for onion, coriander, and cilantro. Blend.

I like to use slightly less salt... depending on the size of the avocado and tomato, 1 tsp is far too much. I'd start with half and add to taste.

After blending, chop up the onion and mix it in sans processor. Add the cumin and cilantro last, stir.

Chill and enjoy.


*If you've never peeled a tomato, here's the easy way. Cut a very shallow 'x' at the top of it, just enough to break the skin. Then boil some water. When it's at a rolling boil, take the pot off the burner or out of the nuker or however, and dunk the tomato in. Let it stay there for about 30 seconds but make sure it doesn't cook! When you remove it, the skin should have cracked around your little 'x' and should slip off easily.

It does sound good...except the tomato part...I'm really weird about tomatos.

I swear it's like crack. I love it. And it's not very tomato-y, Shay! I promise.

Oh, also it's best to make sure the avocado is overripe and not hard anymore... even slight brownish or mushy is OK, it gives it a better taste. It's very difficult to find an avocado in the store (at least around here) that isn't rock hard. Buy it in advance and leave it sitting on the counter for a couple days.

put it in a brown paper bag and in a closed drawer one night it will ripen nicely

edit: it's coriander, not cumin, that's what I get for posting it without the recipe immediately at hand.
