Golden Mushroom Chicken
2 lbs (or however much you want, I like tons) white mushrooms
2lbs chicken (white or dark, I like thighs and breasts)
2-3 cans of Campbells Golden Mushroom Soup
4 pimentoes (you can buy sliced in the small bottles)
salt and pepper
Baking dish, enough to lay all pieces flat
Preheat to 350
Mix soup and pimentoes together and set aside.
Bake chicken for 30 mins and drain fat. Pour soup/pimentoe mix over chicken so it's completely covered. I use those huge 12x9 baking dishes about 2 inches deep. I fill it to the brim practically.
Bake another 45 mins but take out before the top and explosed chicken starts to crisp. The sauce should not be watery but gravy like. Eat with steamed fresh rice.
My mom found this receipe somewhere, I dont know, I was like 7 years old and had a mushroom fetish. How cool is my mom, she STILL makes this for me when I visit.
