The Clark Family Creaser Salad

Ingredients

4 Lemons
4 Cloves of Garlic
Black Pepper to taste
Olive Oil
Anchovy Paste or a tin of Anchovies
A Block of Fresh Parmesan Cheese
A jar of real Dijon Mustard (Malle stone ground is what I use) (not grey pupon or a creamy type)
A head of Green Romaine
A head of Red Romaine
A box of croutons
4 Chicken Breasts Chopped (Optional)
1 Pound of Cooked Shrimp (Optional)

Directions

Grate about half the block of cheese and set it aside
Cut up the lettuce

In a mixing bowl or food processor either pod about half the tin of anchovies until they are nearly pureed or use about an inch of the paste.

Crush the garlic and juice the lemons in this bowl.

Add about ¾ of the jar of mustard and about the same amount of olive oil.

Add the cheese and pepper and stir until the mixture is smooth. IF needs be add more oil if it appears to be too pasty. It should be soupy in texture.

In a Very Large Salad Bowl add the lettuce and top with meat. (optional)

Dump the dressing all over the top and the dig in with your hands mixing it all up.

Top with more Cheese and Croutons.
