Vegan Quiche

Yeah I realize that is an oxymoron of a title, but it sure tastes good!

Ingrediants:
2c Cooked Rice
2T Margarine (Earth Balance)
2t Basil
2t Nutritional Yeast (Not brewers or baking yeast, its a dietary supplement type thing.)
1t Olive Oil
1 med Onion, diced
10 oz Mushrooms, diced (Button or bella, more if you want)
1lb Chard, Kale or Spinach, washed, de-stemed and diced
1/4c Water
1 Bullion Cube (Knor)
1 box Mori Nu silken extra firm tofu
2T Mustard
2t Basil (to taste)
2 cloves Garlic (to taste)
2T Nutritional Yeast (Not brewers or baking yeast, its a dietary supplement type thing.)
1/4c Soy Milk (Silk)

In a high sided casserole dish combine the first four ingrediants. Smush down into a 'crust' but not to the top of the sides. Bake at 350 for 15 minutes.
Saute the onion and mushrooms in olive oil for 10 minutes. Add in greens, water and bullion. Cover and steam 5 minutes.
In a blender or food processor combine the last 6 ingrediants and blend until smooth and completely free of lumps.
Add the tofu mix to the pot with the sauted veggies, stir gently to combine.
Spoon into the hot and set rice crust.
Bake at 350 for 45 minutes.
Let rest for 15 minutes before serving.

I love quiche, I want to try this...but i'm not sure if i can get the ingredients.

Mori Nu tofu seems to be very common. It comes in aseptic boxes on the shelf of most grocery stores. I know I could get it in TN which was a miracle in and of itself. Not sure about Alaska.

Nutritional yeast is a flakey cheezy additive that you could probably replace with parmesean cheese. Of course I use a vegan version of that myself occasionally.

Things like Earth Balance Margarine and Silk Soy Milk are my preferances. So you are welcome to make it L/O with regular butter and milk. ;)
