Mushroom and Asiago Cheese Grits

3 cups Chicken Broth
1 cup Uncooked quick cooking grits
1/2 cup Butter (1 Stick)
1 Medium Onion, Chopped
8 oz. Crimini Mushrooms, Sliced or Baby Port.
2 1/2 cups Asiago Cheese shredded
2 Eggs lightly beaten
salt, to taste

Preheat Oven to 350F

Bring broth to a boil in large saucepan, stir in grits, Reduce heat
and simmer, stirring occasionally, 5-7 minutes. Remove from heat.
Cover.

Melt butter in a large skillet; add onion and saute 5 minutes; add
mushrooms; continue to saute until tender. Stir in grits, cheese,
eggs and salt. Pour into a lightly greased baking dish (soufle dish
works well).

Bake for 30 minutes; serve immediately.
