The Diabetic and the Picky Eater

We've been having my sister in law and her husband over for dinner on saturday nights and take turns cooking, but I am running out of ideas that fit their dietary requirements and was hoping for a little nudge in the right direction.

First off...I'm not so hot in the kitchen. I can burn water. I've set fire to my stove multiple times and one of my heating elements is completely destroyed. I'm okay with cutting and chopping and measuring and stuff, and can sort of bake without anything terrible happening, but I totally space when it gets to the stove top stuff. So, you know, keep that in mind.

So the first issue is the diabetic dealie. Gotta go easy on the carbs which is pretty against the grain for me and eliminates a hell of a lot of things I know how to make :X.

The next issue would be the picky eater. Well, picky eaters. I loathe the following:

All peppers. No, not just hot peppers. All peppers. Loathsome foul peppers.
Pepper (as in the kind you grind up)
Melons
Tomatoes, unless they are in catsup or non chunky sauce form (I think the texture puts me off)

There are many other foods I will wrinkle my nose at but can tolerate, but those are the deal breakers.

My sister in law's husband loathes the following:
All meat except chicken
Melons (hey, that works)
All sea food

We're not even going to get into everything the kid hates; we mostly say fuck it and make her some peanut butter and jelly. Hell, sometimes I'm tempted to say fuck it and make myself some peanut butter and jelly. Fozz, bless his heart, will eat anything.

Anyway. Ideas?

I dont eat red meat myself. Some thoughts.

Turkey Burgers (East to make) no bun, Homemade fries
Home Made Fettuchini Alfredo with Chicken (they make low carb pasta now). Look up a recipe online on how to make the alfredo.
Home Made Fried Chicken with corn on the cob and a salad or slaw

Ill post some more as I think of them.

Turkey burger recipe I got out of a diabetic cookbook. Its really tasty I have them like once a week.

1lb lean ground turkey 7% fat
1/2 c of chopped green onion
1/2c of finely chopped parsley
1 tbs of italian seasoning
2 tbs of red wine
salt and pepper to taste

combine all ingredients, then I use a george foreman grill and grill them til the pink is gone, about 6 mins, the recipe says to put them on a cookie sheet and broil them in the oven 6" from the heating elements 4 mins each side, but that usually results in my smoke detector going off, the grill is much better.

Turkey. I don't get turkey products. I like turkey sandwiches and Turkey dinner ala Veb's gay cousin Rick in Seattle. Turkey bacon is SO SALTY. =( Don't hate on the ground beeF =(

All meat and seafood but chicken? I know that you can tons of things with chicken, but come on now...you are forced to live with/as a diabetic which already limits some of the foods that you will eat.

Just forgo the dinner and have them over for coffee/tea and sugar free :pie2

I have never seen this 'low carb pasta'. Seems like a bit of an oxymoron :\. However, this does improve my options as I already know how to make alfredo sauce :D.

Fried chicken sounds wonderful....I'm kind of scared of cooking with hot oil though. I've made potato pancakes without injury but that's the extent of my experience with such methods.

Thanks for all the ideas though, sincerely! We can do turkey burgers in a few weeks, getting to be grill season around here.

its not necessarily 'lo carb' but its like.. good carbs instead of bad carbs.

i had some the other day. whole wheat carbhealthy pasta, barilla "plus" brand. dry as fuck though, so dont eat it unless you're adding sauce or a fuckload of butter.

Ok, from the vegan, my suggestion is this: (ironic i know)

Roast chicken with small potatoes and green beans.

Buy a whole chicken, about 3 pounds if I recall. Thaw if frozen. Clean the crap off of the outside and inside. Slather in margarine with garlic powder mixed in and toss half a stick of margarine inside mr. bird. Put it breast down on a rack (the V shaped kind) in a deep pan. Bake covered with foil at 350, damned if I can remember the amount of time. Maybe an hour? Two? dunno. Look that shit up.

Buy tiny red or fingerling potatoes, just enough for like 2 per person to limit carbs. Wash and toss into the bottom of the pan so they get coated in chicken ooze. These should only need to be cooked like 30 to 60 min, so toss them in at the right time.

Buy fresh green beans, steam gently then drain and sprinkle some salt on. Done!

Serve it all with salad.

Of course I dont cook like that or for diabetics. You can sub out garlic for herbs if you are a freak of nature and dont eat the best thing in all the world.

Personally, I would make a whole grain pilaf, seitan and roasted veggies meal. But thats me. Good luck!
