Banana Bread

I need banana bread. NEED IT. Post your recipes!

1/2 C Margarine
1 C sugar
2 eggs
2 C sifted all-purpose flour
1/2 tsp salt
1 tsp baking soda
1 C mashed ripe bananas (appx 2)
1/2 C chopped walnuts
1/4 C milk
1 tsp vanilla

Cream together magarine, and sugar. Add eggs and beat well. Sift together dry ingredients; add to creamed mixture, alternating with mashed banana, blending well after each addition.
Stir in nuts.
Pour into well-greased 9 1/2 x 5 x 3 inch loaf pan.
Bake at 350 oven for 50-60 minutes or till done.
Remove from pan and cool on rack.

This is my mom's recipe that I've used for years. I LOVE banana bread :)

I use the one listed below because it is simple and delish! I found this on VegWeb years and years ago and its always a hit. Plus you can add any spices; cinnamon, nutmeg, ginger, or any sugars; maple syrup, agave nectar, or any flours; whole wheat, pastry, all purpose. Its very adaptable to what you have on hand or feel in the mood for. Supposedly its outstanding if you add oats and cranberries.

Banana Nut Bread

Ingredients:

3 ripe bananas
2 tablespoons olive oil
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup coarsely chopped walnuts

Directions:

Preheat the oven to 350 degrees. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts. Pour the well blended batter into the greased pan and bake for one hour. Remove and let cool.

I found this recipe works better than many I've tried since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice however olive oil is the healthiest!

Serves: 1 Loaf
