Red Peppers with Cashews


  • 1/2 cup(s) pepper(s), red, bell

  • 2 teaspoon oil, olive

  • 2 tablespoon nuts, dry-roasted, unsalted cashews

Sauté sweet red pepper slices in olive oil over medium-high heat until slightly tender. Add 2 tablespoons chopped cashews and cook for an additional minute.
