Parsley Chicken


Chicken breast and Catalan cauliflower

• 2 chicken breasts, thinly sliced
• 1/2 bunch parsley
• 2 garlic cloves, crushed
• 3/4 cup vegetable oil
• 1 head of cauliflower, trimmed and broken into pieces
• Salt to taste
Mix the parsley, garlic and 1/2 cup of oil in the blender, blend until smooth. Marinate the chicken breast in mixture. Season the chicken with salt. Over medium heat, heat 2 tablespoons of oil. When the oil is hot, add chicken and saute until the chicken begins to brown. In a separate pan, bring salted water to a boil, Add cauliflower to pan and cook until tender, about 5 minutes. Season with salt to taste, drizzle with oil. Serve with the seared chicken breast. Garnish with parsley leaves.

I made this last night, sans the cauliflower. This was easy, smelled glorious, and was really delicious.

Did you use a different veggie to go with it, or just go with the chicken?

I went with cut asparagus and roasted mash potatoes =D

Add lemon juice to the marinade, and this is something I've been cooking for years, and loving

This sounds great, I'll try anything chicken especially since it's the only meat my little guy will eat! lol
