Chicken breast and Catalan cauliflower
Ã¢â‚¬Â¢ 2 chicken breasts, thinly sliced
Ã¢â‚¬Â¢ 1/2 bunch parsley
Ã¢â‚¬Â¢ 2 garlic cloves, crushed
Ã¢â‚¬Â¢ 3/4 cup vegetable oil
Ã¢â‚¬Â¢ 1 head of cauliflower, trimmed and broken into pieces
Ã¢â‚¬Â¢ Salt to taste
Mix the parsley, garlic and 1/2 cup of oil in the blender, blend until smooth. Marinate the chicken breast in mixture. Season the chicken with salt. Over medium heat, heat 2 tablespoons of oil. When the oil is hot, add chicken and saute until the chicken begins to brown. In a separate pan, bring salted water to a boil, Add cauliflower to pan and cook until tender, about 5 minutes. Season with salt to taste, drizzle with oil. Serve with the seared chicken breast. Garnish with parsley leaves.
