Vegetarian meals?

Any suggestions? I'm trying to do this at least once a week, but have a picky family to contend with. So far I've got (not vegan, just vegetarian):

Egg Plant Parmesan
Vegetarian Lettuce Wraps with Tofu
Eggs Salad Sandwiches and Tomato Soup
Vegetarian Pizza

Slightly less viable but maybe still possible options:
Chickpea Stew
Baked Potatoes

Husband is not a big fan of beans or veggie burgers. Oooh, I should venture into Indian Food I think, lots of veggie stuff there.

Out of what you have listed - My vote is on Vegetarian Pizza or Egg Plant Parmesan. Im just not a huge fan of tofu.

Even though I love Baked Potatoes...especially the fully loaded ones...but I see that as too much of a side to a steak than a meal to itself.

Ooh, That just gave me a few dinner ideas! About the only thing I remember aside from the salad bar from school lunches, was a baked potato bar! I never used to put the meat they offered in it, just bacon bits, broccoli, cheese and sour cream, yummo! hehe

you could make no meat chili, or tortilla soup using a veggie broth and not adding meat.. both are yummy with or without meats.

have you looked at thai food? can sub tofu in instead of any other meats.

Oooh, that's worth a try.

I bought some tofu thinking I'd make lettuce wraps. Then I priced out the rest of the ingredients and discovered that it would add up to about 40 dollars. Fuck that shit, I'll take away from PF Changs.

Tofu is great in hot and sour soup, I also like it in lo mein as well.

You could also stick it in things like spaghetti sauces or chili since itll just absorb whatever flavor from the sauce.

Eggplant Parmesan was a reasonable success. Next time, less oregano, and only 1 egg plant. Considering I'm having to put three quarters in the freezer, I think 1 is fine.
